Our Wines

“We’d like to think of wine as something alive, authentic and spontaneous that encapsulates the story of the grapes and the land they come from. This is why we intervene in the process as little as possible, preferring small artisanal uncertainty to more precise winemaking processes.

We love thirst-quenching wines, the ones you can pair with a snack, a meal with friends or a long chat. Wines that put a smile on your face and put you in a good mood. We love wines that don’t hide who they are, who can strip down and be proud of themselves, without any misleading appearances.”

Calaverna is a Grechetto blend. A wine that exalts the most popular and enigmatic Umbrian white grape varieties, but shaped in an unusual environment. Straight lines and lagged tears, short circuits and linear visions in a juxtaposition of dichotomies that delve deep into the pulp.

SOIL: generally sandy, alluvial, rich in stone and potassium. Above 300 metres.
GRAPES: primarily grechetto.
WINEMAKING/REFINEMENT PROCESS: fermentation in steel vats for 15-20 days followed by frequent stirring on its own fine lees. No or only partial malolactic fermentation, depending on the vintage. Aged in steel tanks and bottles.

One glass leads to another.
A flavourful wine with a gentle but clearly Mediterranean soul.
Pairs well with snacks, but doesn’t shy away from more elaborate meals.

SOIL: generally sandy, alluvial, rich in stone and potassium. Above 350 metres.
GRAPES: ciliegiolo.
WINEMAKING/REFINEMENT PROCESS: gentle destemming with a partial crushing of the grapes. Natural fermentation over 15-20 days in steel tanks with a very short maceration. Malolactic fermentation performed by aerating the new wine and stirring the fine lees. A few months of maturation in steel with periodic stirring. Bottled without clarification or oenological additives, except for small doses of sulphur dioxide.

“A black that you’d never see in a lifetime, so sweetly black,” sang the poet. Just like this wine and its dark, sweet tones, like a summer’s night, ready to steal you away and set you free.

SOIL: sandy, very loose and poor in organic substances, alluvial, rich in stone and potassium with steep slopes. A mix of two different parcels of dense mature vines.
GRAPES: syrah.
WINEMAKING/REFINEMENT PROCESS: some grapes are destemmed while others are left as a whole bunch. Natural fermentation in steel containers and no longer than 10 days maceration. Malolactic fermentation is carried out in large truncated French oak barrels from various (nearly exhausted) passages, stirring the noble lees. Matured in large casks for at least 8-10 months. Bottled without clarification or oenological additives, except for small doses of sulphur dioxide.
WINE: dark ruby with sparks of violet, blackberry and dark berried fruits aromas with decisive hints of balsamic and spice. As tight as it is light and complex, with intriguing echoes of black pepper.

A wine that goes straight to the mouth without a second on the lips. Immediate sensations of joy, of harvests from long ago, cool cellars and sun-soaked summer snacks.

SOIL: sandy, very loose and poor in organic substances, alluvial, rich in stone and potassium with steep slopes and altitudes greater than 350 metres. A mix of two different parcels of dense mature vines.
GRAPES: malvasia nera.
WINEMAKING/REFINEMENT PROCESS: light destemming with partial crushing. Natural fermentation in steel tanks for 15-20 days and a very short maceration. Malolactic fermentation by aerating the new wine and stirring the fine lees. Maturation in steel for a few months with periodic stirring. Bottled without clarification or oenological additives, except for small doses of sulphur dioxide.

Racchiusole, nothing more.
A unique vine and wine that derives exclusively from it, perfectly in line with the project.

SOIL: very sandy, alluvial, rich in stone and potassium with steep slopes. Vines that peer over 400 metres in altitude.
GRAPES: pinot noir.
WINEMAKING/REFINEMENT PROCESS: fermentation in stainless steel tanks for 15-20 days, follow by frequent stirring on its fine lees. No or partial malolactic fermentation, depending on the vintage. Maturation in steel tanks and bottles.
WINE: light destemming without crushing, showing maximum respect for the grapes. Natural fermentation in steel vats without temperature control. Frequent but gentle délestage and short maceration, no longer than 12-13 days. Musaguzzo is a place and a state of mind that recalls the form we wanted for our re-fermented wine. A soft and vertical “pet nat” that is pungent and lively, flavourful and thirst quenching. A wine that doesn’t betray its wild nature and knows no boundaries.

SOIL: very sandy, alluvial, rich in stone and potassium. Vines over 300 metres.
GRAPES: sangiovese.
WINEMAKING/REFINEMENT PROCESS: vinification of black grapes, re-fermentation and prise de mousse in the bottle.
WINE: bright yellow with amber hues with intriguing aromas of May flowers and fresh fruit, with light hints of a bakery. A fragrant flavour that is clean and tense.
